June 4th, National Cheese Day!
Although there is no information for the creator or origin of this day, do we really need an excuse to eat cheese? Today, eat cheese with every meal, and try a variety of cheeses you have never tasted before. I know I plan to do just that! People around the world love cheeses, and Americans on average consume 31 pounds of cheese a year (Wisconsin and California are the top cheese producing states in the U.S.). Cheese is produced from pressed curds of milk, and can be made from the milk of cows, goats, sheep and even buffalos. The flavor and texture of cheeses are influenced by temperature, aging process and spices. Holding a cheese tasting party is a great way to celebrate National Cheese Day (and don’t forget to pair it with some great wines)!
I, myself, plan on indulging in one of Americas favorite comfort foods – a grilled cheese sandwich and tomato soup….though in recognition of this auspicious day, my grilled cheese sandwich will be much more fancy and exciting. Goat cheese mousse (whip goat cheese and heavy cream to a smooth consistency)
Applewood smoked bacon
Vine ripe tomato
And, of course, Tomato Manchego Bisque (whole peeled crushed tomatoes, heavy cream, tomato paste, herbs and spices to taste, simmer lovingly and long and top with manchego cheese)
